Fishcake Friendship,recipe result of can catch

It was a good practical joke that gave us an excellent cook for our stay in Douala, Cameroon while working in West Africa. We snagged a local’s fishing line while he was away and tied a can of mackerel to it and watched the uproar it caused when he returned and pulled in his line.

Basil, the local, came on board to thank us and borrow some crackers to go with his mackerel. He noticed a bowl of leftover mashed potatoes and offered to cook fishcakes for our dinner in return for having a meal with us. With his immaculate old clothes and graying hair, he was an appealing old gentleman, so I agreed. The meal was simple, tasty and very easy to do. I added his recipe to my collection, but now used dried potato flakes and fresh shallots and onions.

FISHCAKES

1 large can of mackerel (or salmon)
One onion, finely chopped

Shallots
2 eggs
1 tablespoon flour


Instant potato flakes

Put a can of mackerel with the juices in a mixing bowl. Add the eggs, onions, shallots and flour. Salt and pepper to taste. Add the potato flakes and mix until it is the consistency of biscuit dough. Make biscuit-size cakes and either pan fry or deep fry.

Basil needed a job and the boat needed a cook, so I hired him. He gave the galley a much needed cleaning and was on his way out. I asked him where he was going, concerned that I might lose a good cook.

His answer: “I am going to tell my family about my new job and on the way, I am stopping by that Russian freighter and cast my line. Possibly, I will catch a tin of beluga caviar.”
