MUNCIE — Think you don't like fish? Cindy Morris says go light, and you just might.
"Usually the lighter colored fish is the milder tasting," said the veteran seafood manager at the Marsh Supermarket on Tillotson Avenue.
For the record, it's way more than just the name of a tough customer in the hilarious Jim Carey comedy Dumb and Dumber.
It's Morris' favorite fish.
"It's the best fish I've eaten in my life," she said, discussing its mild, smooth flavor and subtle texture. "It's just like it's got its own butter. It's amazing."
When she cooks sea bass, she throws it on a grill above high heat for 10 minutes per inch of thickness, brushing it with Italian dressing or olive oil.
At $15.99 a pound, though, some customers might be leery of fishing that much money from their wallets. Tilapia at $7.99 a pound, however, can be much more palatable, at least financially, especially for those folks who aren't ready to enthusiastically embrace seafood yet.
It's a mild yet flavorful fish, one she likes stuffed with rice and asparagus spears.
Another fish sure to convert seafood doubters is mahi-mahi, which Morris bakes or grills by that same 10-minutes-per-inch measure.
Flounder? That won't leave a seafood doubter floundering for an answer to why folks love it, she said. A very mild fish, she rolls the filets, stuffing them with spinach-crab cakes that are also available in her department, then bakes them at 400 degrees for about eight minutes.
Scallops are another winner, the pearly white, lumpy little delicacies being mild of taste and beautiful of texture.
"You can skewer them and grill them, or wrap them in bacon and grill them," Morris suggested. "Or sauté them in a skillet with olive oil."
Other mild fish? Grouper, pollock, swai and orange roughy, the last of which rings up at $12.99 a pound, are four customer favorites. All of them, and more, are available at Pier 48, a new freezer case stocked with 48 items that is just a stone's throw from Morris' seafood counter.
